'light' Impossible Breakfast Quiche

Yield: 4 servings
1cups Low-fat cheddar cheese;
1cups Ham, extra-lean; cubed, or
½cups Green onion, thinly sliced
2  Eggs
1cups Eggbeaters
1cups Bisquick, 'Light'
2tablespoon Butter, melted; (or omit
¾cups Liquid butter buds
3cups Nonfat milk

Preheat oven to 350 F.

Spray a 9 x 13" pan with pan coating and scatter the meat, cheese and onions evenly over the bottom. Sprinkle with salt and pepper to taste (omit salt if using ham).

Put remaining ingredients in blender and blend 15 seconds. Pour over ingredients in pan. Bake for 50 to 60 minutes, or until a knife inserted in the center comes out clean. Let sit 5 minutes before cutting into squares.

While there are _some_ fat-bearing ingredients in this, the flavor is much superior to using ALL substitutes, and the fat is drastically reduced from the original recipe.

For brunch, serve with fruit salad and whole-wheat toast.
