Ruben Figarello at work mentioned this interesting mother, just before thanksgiving. Begin with the standard cooked onions, turkey parts, (etc.) but instead of coarsely chopped bread, substitute coarsely chopped plantain. (I haven't tasted plantain, but accoding to the dictionary it grows like a banaa and taste rather like a potato). I've never had this so if anyone tries it, I'd like to hear how it comes out.
