HINNUNWE (SPINACH… INGREDIENTS:

Hinnunwe (Spinach Stir Fry)

Instructions:
Yield: 4 servings
1lb Fresh spinach
1tablespoon Corn OR peanut oil
2tablespoon Sliced onion
1cl Garlic, sliced thin
2tablespoon Dried shrimp powder
1tablespoon Fish sauce (nam pya ye)
½teaspoon Salt
2tablespoon Thin-sliced semi-hot green
  Chili (optional)

Rinse the spinach under cold water several times to remove sand. Trim off tough stems. Drain and set aside.

Heat the oil and sgtir fry the onion and garlic over moderate heat for 2 minutes. Add the shrimp powder and stir for a moment. Add the fish sauce and sal;t, and stir fry forf 1 minute.

Add the chili and spinach, and stir fry for 3 minutes to wilt the spinach. Stir and toss but do not overcook.
