4  Egg whites; room temperature
¾cups Sugar
¾cups Oat bran; unprocessed
2/3cups Pecans; toasted, chopped
1tablespoon Amaretto
½teaspoon Almond extract

Recipe by: Cooking Light, Guilt-Free Desserts Preheat oven to 300 degrees; coat two cookie sheets with nonstick cooking spray. Beat egg whites in a large bowl at high speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form. Gently fold in oat bran, pecans, amaretto and almond minutes, or until golden and firm. Remove f cookie: 36 calories, 1.5g fat, 38% calories from fat)
