VEGETABLE FISH FI… INGREDIENTS:

Vegetable fish filets

Instructions:
Yield: 2 servings
1lb Sole or cod filets
1tablespoon Oil
1cups Sliced onion
3cups Sliced zucchini
1cups Green pepper slices
¾cups Chopped tomatoes
3tablespoon Dry sherry (optional)
1tablespoon Lemon juice
½teaspoon Salt
½teaspoon Basil
¼teaspoon Pepper
2  Drops hot pepper sauce
¼cups Parmesian cheese

onion, zuchini and green pepper in oil until crisp-tender; spoon over 25-30 minutes. Remove fish and vegetables to heated platter; sprinkle with parmesian cheese. if desired, serve pan juices over bulgar or rice.
